Yorkshire Fat Rascals
Doesn't sound politically correct these days! 375g / 3/4 lb / 3 cups plain / all purpose flour
50g / 2 oz white vegetable shortening or lard
85g / 3 oz currants
50g / 2oz butter
1 teacup size of cream
85g / 3oz sugar
Rub shortening into flour, add dry ingredients and mix with cream to a stiff paste. Roll out to 3/4 inch thick and cut into rounds. Bake in a hot oven at 230C / 475F / gas mark 6 on a floured baking sheet, for 10-15 mins.
